Majoon - The ancient cannabis candy from 1840

Around 1840 the Irish doctor William Brooke O'Shaughnessy who was experimenting with cannabis for medical use published a lenghty paper containing the following recipe for Majoon, a cannabis confection widely used at that time.

Ingredients Part 1 (hemp butter):

-1/2 Ounce of cannabis
-equal amount of butter
-50 to 100 ml of water

1.The ingredients are mixed together and heated until all the water has evaporated which is noted by the melted butter starting to crackle on the sides of the pot.

2.The mixture, while still hot, is filtered through a cloth and the remaining leaves etc. discarded.

3.One can do the additional step of washing the resulting butter with soft water until the water is no longer discoloured and a soft green mass remains. (recommended)

Ingredients Part 2

-100 grams of sugar
-little bit of water
-milk
-milk powder

1.The sugar with a little bit of water is gently heated in a pot until the sugar is completely dissolved and frothing

2.Add 10 ml of milk and remove the thick scum that arises by scooping it off.

3.Under careful stirring more water and milk are added while the boiling is continued for about an hour. The aim is to get a clear adhesive syrup that readily solidifies on a cold surface.

4.Under brisk stirring add 20 g of dried milk powder and finally the earlier prepared hemp butter.

5. Rose water (or any other flavouring) is added before the still hot mixture is poured into a pan where it will quickly solidify ready to be cut into lozenges of desired size.

swim is a chef and has several cannabis cookbooks and has never come across this recipe before. Swim appreciates this very much and will be attempting this in the near future and will hopefully report back with some results.
