Extraction - Can stems be dried as well as leaves?

Swim harvested leaves from a plant yesterday and is almost done drying them with low heat in a dark well ventilated space. swim didn't know if the leaves should be trimmed from the stalk first so they were left on.

Should swim remove the leaves from the stalks or are the stalks worth drying and using too?
