Melting sugar into absinthe.
Is there a way to do it without using special absinthe spoon or whatever? And are there any risks, e.g. burning off the alcohol?

I thought people just poured the absinthe over the sugar cube, such that it is dissolved, not melted. Is one thinking of melting it with a flame or heat source?
If you are just pouring the alcohol over the cube then maybe try some mesh screen or even a window screen. Although I would probably hold this over a flame first to burn off any unwanted organic matter. |

normally what happens is you have your absinthe in a glass, with a sugar cube placed on an absinthe spoon on the glass. you light the sugar cube until it is mostly melted, then pour water over the sugar until its all in the glass. the mixture should be about on part absinthe two parts water. Swim has only done this a few times, as normally the bar does it for you.

One reason swim loves absinthe is swim cant taste how harsh it is. You lucky buggar, enjoy it.

traditionally one would use cold water poured over a sugar cube, not melted or anything, afaik melting the sugar was a later way to do it. Swiy should use between 3-5 times as much water as absinthe

the sugar burning method is an absurdity introduced by the czech liquor sellers, who wanted to bring attention to their new disgusting toothpaste tasting absinthe like drinks...
it's a waste of absinthe, lowering the alcohol content and ruining the taste with caramelized sugar.... don't. there are a few good post on absinthe, explaining what absinthe really is, and how to drink and choose a good one. if the absinthe you have is indeed to bitter or not sweet enough for your taste (most aren't unless you have a sweet tooth or a very bitter absinthe) you can pour the ice cold water on the (white) sugar using a mesh as mentioned. but even if you don't sweeten the absinthe, use a mesh anyway the idea is to pour the water into the absinthe as slowly as possible in order to give out the full bouquet of aromas, which are pretty much volatile oils. the slower you pour the water, the better the taste and the prettier the louche ( unless swiyou has a bottle of white absinthe, in which case you won't have a louche). you will really notice a difference if you let the water drip rather than pour it in. swim's favorite are swiss blue absinthes in the line of "la bleue clandestine"... love those flowery honey overtones. b Last edited by Benga; 17-08-2007 at 04:16. |

Lol, that would work too, although it kinda takes the fun and mystery out of absinthe a bit. Does that mean he drinks absinthe cold? Swim has only ever had it at slighter warmer than room temperature.
